Celiac disease is an autoimmune condition where ingestion of gluten (found in wheat, barley, and rye) triggers an immune reaction that damages the intestinal villi of the small intestine. This results in malabsorption, diarrhea, weight loss, anemia, and vitamin deficiencies. The only effective treatment is a lifelong gluten-free diet.
